What are spaetzle?

Is that pasta? - No, definitely not! Spaetzle has nothing to do with noodles. Swabian Spaetzle are a specialty that should be freshly made.

For all North German and yet ... Non-Spaetzle-eaters:

Please do not confuse dried spaetzle in the bag, vacuum packed and frozen which you can buy in supermarkets with himself never made spaetzle. Same taste made spaetzle, and indeed the taste very good.

Warum auch Knöpfle mit dem Spätzlebrett so einfach gehen

Knöpfle sind, wie jeder weiß, die bayrische Variante von Spätzle. Doch wo die Schwaben mal richtig großzügig sind, nämlich bei der Länge ihrer Spätzle, sind dafür die Bayern knauserig. Der Knöpfleteig für die Knöple ist der gleiche wie für die Spätzle, also Mehl, Eier, Salz, Wasser und Teigwürzer, lediglich in der Größe unterscheiden sich die beiden Sorten.

Um Knöpfle zu bekommen muss lediglich die bayerische Seite an dem Spätzleschieber genutzt werden, und schon gibts statt schwäbischer Spätzle bayrische Knöpfle. Die bayerische Seite des Spezialschabers ist übrigens die harte Kante des Spätzleschiebers, so wird der Teig auf dem Spätzlebrett kurz abgeschnitten.
